For the Sandwich
  • 2 tablespoons Hellmann’s® Real Mayonnaise Substitute with any mayo or omit for lighter option.
  • 4 slices Crusty Whole Grain Bread Gluten-free option available.
  • 4 slices Sliced Low-Fat White Cheddar Cheese Can replace with mozzarella or pepper jack.
For the Roasted Vegetables
  • 1 cup Sliced Roasted Vegetables (eggplant, zucchini, mushrooms) Mix in any roasted veggies of your choice.

Method
 

Step-by-Step Instructions
  1. Preheat a non-stick skillet over medium heat for about 2-3 minutes.
  2. Spread a layer of Hellmann’s® Real Mayonnaise on one side of each slice of bread.
  3. Assemble the sandwich with one slice of bread mayo-side down, adding cheese and roasted vegetables.
  4. Top with the second slice of bread, mayo-side up, and press down gently with a spatula.
  5. Cook for 3-4 minutes or until golden brown, then flip to grill the other side.
  6. Remove from skillet, let cool slightly, slice and serve warm.
