- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- In another bowl, whisk the egg and sour cream until combined then mix into the dry ingredients.
- Gently fold in the zucchini and cheddar cheese, reserving some cheese for the topping.
- Turn the dough onto a floured surface, knead briefly, and shape into an 8-inch circle.
- Cut the dough into 8 equal wedges and transfer to the prepared baking sheet.
- Sprinkle the remaining cheddar cheese on top of each scone.
- Bake for 22-24 minutes until golden brown and puffed.
