Step-by-Step Instructions
  1. Begin by washing and slicing your red bell pepper, cucumber, and red onion into bite-sized pieces. Halve the cherry tomatoes and add all the vegetables, along with the kalamata olives, into a large mixing bowl.
  2. In a separate small bowl, whisk together the white wine vinegar, olive oil, fresh lemon juice, oregano, salt, and black pepper until well combined.
  3. Pour the pickling liquid over the vegetable mix in the large bowl. Use a spatula or your hands to gently toss the veggies until they are evenly coated.
  4. Cover the bowl with plastic wrap or transfer the mix to an airtight container and refrigerate for at least 2 hours.
