Step-by-Step Instructions
  1. Begin by washing and drying the large lemons and fresh ginger thoroughly. Cut each lemon in half and juice them until you have about ½ cup of bright yellow juice. Grate the ginger to yield approximately 3 tablespoons.
  2. In a small mixing jar, combine the freshly grated ginger, sugar, kosher salt, and freshly squeezed lemon juice. Pour in 1 cup of chilled water and stir well until the sugar completely dissolves.
  3. Place a fine mesh strainer over a large pitcher and carefully pour in the mixture, pressing down with a spatula to extract as much juice as possible. Add 4 cups of additional chilled water to the pitcher and stir thoroughly.
  4. Fill glasses with ice cubes. Pour the lemonade over the ice and garnish with fresh mint or a slice of lemon.
