Marinade Preparation and Chicken Cooking
- In a medium bowl, whisk together olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper until combined.
- Place chicken in a sealable bag or shallow dish and pour marinade over, coating evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 4 hours.
- Preheat grill or stovetop pan over medium-high heat for about 5 minutes.
- Remove chicken from marinade, letting excess drip off, and place on the grill or pan. Cook for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
- Transfer cooked chicken to a cutting board and let it rest for 5 minutes before slicing.
- Serve either sliced or whole, garnished with fresh cilantro if desired.

Notes
For optimal flavors, marinate for 1–4 hours, checking the internal temperature of the chicken to avoid drying out. Resting for 5 minutes after cooking enhances juiciness and tenderness.
