Method
 

Marinade Preparation and Chicken Cooking
  1. In a medium bowl, whisk together olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper until combined.
  2. Place chicken in a sealable bag or shallow dish and pour marinade over, coating evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 4 hours.
  3. Preheat grill or stovetop pan over medium-high heat for about 5 minutes.
  4. Remove chicken from marinade, letting excess drip off, and place on the grill or pan. Cook for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  5. Transfer cooked chicken to a cutting board and let it rest for 5 minutes before slicing.
  6. Serve either sliced or whole, garnished with fresh cilantro if desired.
