Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the vegan butter and granulated sugar until fluffy.
  3. Mix in the pumpkin puree and vanilla extract until fully combined.
  4. In a separate bowl, sift together the flour, baking soda, baking powder, and cinnamon. Gradually add to the wet ingredients, stirring just until combined.
  5. Gently fold in the chocolate chips with a spatula.
  6. Drop small mounds of dough onto the prepared baking sheets, spacing them 2 inches apart.
  7. Bake for 12–14 minutes until the edges are slightly golden.
  8. Allow cookies to cool on sheets for about 15 minutes before transferring.
