- In a small bowl, combine ranch dressing with taco seasoning. Whisk together until fully blended and creamy.
- Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package instructions, about 8-10 minutes.
- In a large mixing bowl, add the cooled rotini pasta and drizzle the ranch dressing over it, tossing gently to coat.
- Fold in halved cherry tomatoes, diced green and red bell peppers, and finely diced red onion.
- Stir in rinsed and drained black beans and drained canned corn.
- Cover and chill in the refrigerator for at least 30 minutes.
- Before serving, gently toss the salad and top with chopped cilantro and tortilla strips or Doritos.
