Ingredients
  

For the Pasta Salad
  • 8 ounces Rotini Pasta opt for gluten-free pasta if needed
  • 1 cup Ranch Dressing regular is recommended, or yogurt-based for lighter option
  • 2 tablespoons Taco Seasoning adjust based on taste preference
  • 1 cup Cherry Tomatoes halved; substitute with grape tomatoes if required
  • 1 each Green Bell Pepper diced; can use red or yellow for sweetness
  • 1 each Red Bell Pepper diced; can be substituted with any preferred bell pepper
  • ½ each Red Onion finely diced; substitute with green onions for milder taste
  • 1 can Black Beans rinsed and drained
  • 1 cup Corn canned corn should be drained, frozen corn can also be used
  • ½ cup Chopped Cilantro optional; can substitute with parsley
  • 1 cup Tortilla Strips or Crunchy Doritos optional for topping

Method
 

Steps
  1. In a small bowl, combine ranch dressing with taco seasoning. Whisk together until fully blended and creamy.
  2. Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package instructions, about 8-10 minutes.
  3. In a large mixing bowl, add the cooled rotini pasta and drizzle the ranch dressing over it, tossing gently to coat.
  4. Fold in halved cherry tomatoes, diced green and red bell peppers, and finely diced red onion.
  5. Stir in rinsed and drained black beans and drained canned corn.
  6. Cover and chill in the refrigerator for at least 30 minutes.
  7. Before serving, gently toss the salad and top with chopped cilantro and tortilla strips or Doritos.
