- Cook the Pasta. Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente for about 8-10 minutes. Drain and set aside.
- Make the Cheese Sauce. In a medium saucepan, melt butter over medium heat. Whisk in flour for 1-2 minutes, then gradually pour in milk and cream, whisking until thick. Stir in cheddar and mozzarella until melted.
- Combine Chicken and Sauce. Add shredded chicken and buffalo sauce to the cheese sauce and stir until chicken is coated. Fold in the macaroni.
- Broil for Finish. Transfer to a greased baking dish and broil for 2-3 minutes until bubbly and golden.
