- In a medium saucepan, heat 2 tablespoons of oil over medium heat. Add 3 minced garlic cloves and 1 tablespoon of grated ginger, cooking for about 4–5 minutes until fragrant and lightly golden.
- Add 1 cup of uncooked long-grain or jasmine rice to the pan, stirring continuously for approximately 2 minutes until it takes on a light golden hue.
- Incorporate 1 cup of chopped pineapple, 1 tablespoon of sriracha, 2 tablespoons of coconut aminos, and 1 teaspoon of sweetener into the rice. Continue cooking for 1 minute, stirring gently.
- Pour in 1 ¾ cups of water and bring to a rolling boil. Once boiling, reduce the heat to medium-low and cover, simmering for about 15 minutes until liquid is absorbed.
- Turn off the heat, keeping the lid on for an additional 5 minutes. Fluff the rice with a fork and serve warm.
