Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.
- In a large bowl, whisk together all-purpose flour, baking soda, and salt.
- Mash overripe bananas in a medium bowl to yield 1 cup of mashed bananas.
- Beat two bananas with granulated sugar until light and fluffy.
- Combine melted butter, eggs, and vanilla extract into the banana-sugar mixture.
- Gently fold wet ingredients into the dry ingredients until just mixed.
- Add chopped pecans and mashed bananas to the batter and stir gently.
- Pour batter into the greased loaf pan and tap to eliminate air bubbles.
- Bake for 50 to 60 minutes or until golden brown and a toothpick comes out clean.
- Cool the bread in the pan for about 10 minutes before transferring to a wire rack.
- Slice and serve warm with optional confectioners' sugar on top.
