  • 1 teaspoon Ground Mexican Oregano Regular oregano is a good substitute.
  • 1 teaspoon Ground Chili Powder Adjust the quantity to taste.
  • 1 teaspoon Smoked Paprika Plain paprika can be used.
  • 1/4 teaspoon Cayenne Pepper Omit for less heat.
  • 1/4 teaspoon Ground Nutmeg Leave out if not desired.
  • 1 teaspoon Coarse Salt Fine salt can be adjusted.
  • 1/2 teaspoon Ground Black Pepper Freshly cracked elevates the flavor.

Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
  2. In a mixing bowl, combine tequila, olive oil, lime juice, cilantro, minced garlic, cumin, coriander, oregano, chili powder, smoked paprika, cayenne pepper, nutmeg, salt, and black pepper. Whisk until well blended.
  3. Add the chicken to the marinade and ensure it's thoroughly coated. Seal and refrigerate for 30 minutes to 1 hour.
  4. Transfer marinated chicken to the baking dish in a single layer. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  5. Set the oven to broil and broil the chicken for 2-3 minutes for a charred exterior.
  6. Remove from the oven and let the chicken rest for 5 minutes. Garnish with cilantro and lime slices before serving.
