- Prep your ingredients: cut chicken breasts, trim asparagus, slice leeks, mince garlic, zest and juice lemon, chop parsley.
- Heat 1.5 tablespoons olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and sauté for 5-6 minutes until golden brown. Remove chicken and set aside.
- In the same skillet, add chopped asparagus and cook for 6-9 minutes until tender-crisp. Season with salt and transfer to the plate with chicken.
- Lower heat and add another 1.5 tablespoons olive oil. Add sliced leeks and cook for 5-6 minutes until soft. Stir in minced garlic and optional crushed red pepper flakes, cooking for an additional minute.
- Add orzo to the skillet, stirring constantly for 3-4 minutes until slightly golden.
- Pour in chicken broth and water, bringing mixture to a boil. Reduce heat to medium-low, cover, and simmer for 10-12 minutes until orzo is tender.
- Stir in cooked chicken and asparagus, crumble in Boursin cheese, and mix until cheese melts and chicken is heated through.
- Remove from heat, cover, and let rest for 4-5 minutes before serving.
- Serve in bowls, garnished with parsley and lemon zest.
