  • 1.5 tablespoons Olive Oil Regular or extra virgin based on preference
  • 1 pound Chicken Breast Cut into 1-inch pieces
  • 8 ounces Asparagus Chopped into 2-inch pieces
  • 1 each Lemon Use both juice and zest

  • 1 each Leek Sliced thinly
  • 3 cloves Garlic Mince finely
  • to taste Crushed Red Pepper Flakes Optional
  • 8 ounces Orzo Can substitute with any small pasta
  • 4 cups Chicken Broth Opt for low-sodium if preferred
  • 1 cup Water Adjust for cooking consistency
  • 5 ounces Boursin Garlic & Fine Herbs Cheese Creamy texture
  • 1 tablespoon Fresh Lemon Juice Adjust to taste
  • 1/4 cup Fresh Parsley Chopped for garnish

Steps
  1. Prep your ingredients: cut chicken breasts, trim asparagus, slice leeks, mince garlic, zest and juice lemon, chop parsley.
  2. Heat 1.5 tablespoons olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and sauté for 5-6 minutes until golden brown. Remove chicken and set aside.
  3. In the same skillet, add chopped asparagus and cook for 6-9 minutes until tender-crisp. Season with salt and transfer to the plate with chicken.
  4. Lower heat and add another 1.5 tablespoons olive oil. Add sliced leeks and cook for 5-6 minutes until soft. Stir in minced garlic and optional crushed red pepper flakes, cooking for an additional minute.
  5. Add orzo to the skillet, stirring constantly for 3-4 minutes until slightly golden.
  6. Pour in chicken broth and water, bringing mixture to a boil. Reduce heat to medium-low, cover, and simmer for 10-12 minutes until orzo is tender.
  7. Stir in cooked chicken and asparagus, crumble in Boursin cheese, and mix until cheese melts and chicken is heated through.
  8. Remove from heat, cover, and let rest for 4-5 minutes before serving.
  9. Serve in bowls, garnished with parsley and lemon zest.
