- In a medium saucepan, combine 1 cup of water, 1/3 cup plus 1 tablespoon of unsalted butter, 1 teaspoon of salt, and 2 tablespoons of sugar. Heat over medium-high until the mixture reaches a boil, and the butter is melted.
- Once boiling, remove the pan from heat and gradually add 1 cup of plain flour, stirring vigorously until a dough forms and pulls away from the sides of the pan.
- Let the dough cool for about 4-5 minutes until it's warm but not hot. Add 1 large egg and 1 teaspoon of vanilla essence into the warm dough and mix thoroughly.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes. Transfer the dough into a piping bag fitted with a large star tip.
- Spray the air fryer basket with nonstick cooking spray. Pipe small bites of the churro dough, about 1-2 inches long, leaving space between each piece.
- Brush the piped churro bites lightly with melted butter. Carefully place the basket in the air fryer and cook for 10-12 minutes.
- While the churro bites are air frying, combine 1 cup of white sugar and 1 tablespoon of cinnamon in a bowl.
- Once the churro bites are golden-brown, remove them from the air fryer and immediately toss them in the cinnamon sugar mixture.
