- In a large mixing bowl or zip-lock bag, combine the zest and juice of two lemons, minced garlic cloves, chopped fresh herbs, olive oil, Dijon mustard, honey, kosher salt, and black pepper. Whisk thoroughly to create a vibrant marinade.
- Add the trimmed pork tenderloins into the marinade, ensuring they are generously coated on all sides. Seal and refrigerate for 6 to 12 hours.
- Approximately 30 minutes before grilling, take the marinated pork out of the refrigerator to bring it to room temperature. Preheat your grill to a high heat of 500-550°F.
- Once the grill is hot, place the marinated pork tenderloins at an angle across the grill grates. Grill for 10 to 12 minutes, turning every 3 to 4 minutes.
