Preparation of Tacos
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 2 cups of fresh or frozen corn and cook for 5-7 minutes until it begins to char, stirring occasionally.
- In a mixing bowl, combine 1/2 cup of mayonnaise, the juice and zest of 1 lime, 1 teaspoon of garlic powder, 1 teaspoon of Tajín, and a sprinkle of salt.
- In a blender, combine 1/4 cup of chopped cilantro, 1/4 cup of pickled jalapeños, and a dash of jalapeño juice. Blend until finely minced.
- Divide 1 pound of 80/20 ground hamburger into six equal portions. Press each portion onto a tortilla, seasoning the tops with salt and pepper.
- Carefully remove the smash burger tacos from the skillet and top each with a generous scoop of the street corn mixture. Drizzle the creamy jalapeño sauce over each taco.
