Method
 

Preparation
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Grill the corn for about 10-12 minutes, turning occasionally until charred and tender.
  2. Remove the corn from the grill and let it cool. Once cool, slice downwards to remove the kernels.
  3. Dice the cucumber and red onion into small pieces. Add them to a large mixing bowl along with chopped cilantro.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth.
  5. Pour the dressing over the corn mixture and gently toss to coat.
  6. Cover the bowl and refrigerate for at least 30 minutes to meld the flavors.
  7. Before serving, toss the salad again, adjust seasoning, and garnish with more cilantro if desired.
