Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Stir until coated and let sit for about 10 minutes.
  3. In another bowl, whisk together flour, oats, brown sugar, cinnamon, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture into the bottom of the baking dish, then spread the fruit filling evenly over the crust.
  5. Sprinkle the remaining crumb mixture over the fruit filling and bake for 40-45 minutes until golden brown.
  6. Let the bars cool in the baking dish for about 2 hours before cutting into squares.
