Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Stir until coated and let sit for about 10 minutes.
- In another bowl, whisk together flour, oats, brown sugar, cinnamon, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Press two-thirds of the crumb mixture into the bottom of the baking dish, then spread the fruit filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the fruit filling and bake for 40-45 minutes until golden brown.
- Let the bars cool in the baking dish for about 2 hours before cutting into squares.
