  • 1 large Egg acts as binder

For the Scallion Sauce
  • 0.25 cup Finely Chopped Scallions
  • 2 tbsp Rice Vinegar for glaze
  • 1 tbsp Rice Vinegar for scallion sauce
  • 1 tbsp Water to adjust glaze consistency
  • 1 tsp Sugar

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine 1 pound of ground meat, ½ cup breadcrumbs, 2 tablespoons hoisin sauce, 1 tablespoon soy sauce, 1 tablespoon minced garlic, 1 tablespoon minced ginger, 1 large egg, 1 teaspoon sesame oil, salt, and pepper. Mix gently with your hands until just combined, then form into 16-20 meatballs.
  2. Heat 2 tablespoons of cooking oil in a heavy skillet over medium-high heat. Add meatballs in batches and brown them for 7-10 minutes until golden on all sides.
  3. In the same skillet, combine ½ cup hoisin sauce, 1 tablespoon soy sauce, 2 tablespoons rice vinegar, and 1 tablespoon water. Stir for about 3-5 minutes until it thickens.
  4. Return the browned meatballs to the skillet, rolling them in the glaze to coat. Cover and simmer for 4-6 minutes.
  5. Whisk together ¼ cup scallions, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, and 1 teaspoon sugar in a small bowl for the scallion sauce.
  6. Transfer the meatballs to a serving platter, drizzle with scallion sauce and garnish with additional chopped scallions.
