- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt until well combined.
- In a large mixing bowl, combine 1/2 cup of softened unsalted butter, 1/2 cup of brown sugar, and 1/2 cup of granulated sugar. Beat until smooth and fluffy.
- Add in 1 large egg, 1 cup of creamy peanut butter, and 1 teaspoon of vanilla extract to the butter-sugar mixture. Mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until no visible flour remains.
- Scoop out dollops of dough, roll into balls, and coat each ball in granulated sugar. Place them on a baking sheet lined with parchment paper.
- Press each cookie ball with a fork to create a crisscross design.
- Preheat your oven to 350°F (177°C) and bake the cookies for 11-12 minutes, or until the edges are golden.
