Step-by-Step Instructions
  1. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt until well combined.
  2. In a large mixing bowl, combine 1/2 cup of softened unsalted butter, 1/2 cup of brown sugar, and 1/2 cup of granulated sugar. Beat until smooth and fluffy.
  3. Add in 1 large egg, 1 cup of creamy peanut butter, and 1 teaspoon of vanilla extract to the butter-sugar mixture. Mix until well combined.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until no visible flour remains.
  5. Scoop out dollops of dough, roll into balls, and coat each ball in granulated sugar. Place them on a baking sheet lined with parchment paper.
  6. Press each cookie ball with a fork to create a crisscross design.
