  • 1/2 cup brown sugar light brown sugar recommended
  • 1/2 cup vegetable or coconut oil or melted butter if desired
  • 1 cup plain all-purpose flour gluten-free flour can replace it
  • 1/4 cup unsalted butter softened to room temperature
  • 1 tsp baking powder leavening agent for light texture
  • 2 tsp vanilla extract use high-quality pure vanilla

  • 1 cup chocolate chips use dark, milk, or vegan chocolate
  • 1 cup marshmallows vegan marshmallows can be used

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (356°F) and line a large baking tray with baking paper.
  2. In a standing mixer, cream the softened unsalted butter with both sugars on medium-high speed for 4-5 minutes until light and fluffy.
  3. Add the vanilla extract and mix until fully incorporated.
  4. Gradually add the flour and baking powder to the mixture, mixing until the dough comes together.
  5. Fold in the chocolate chips until evenly distributed.
  6. Scoop out manageable balls of dough onto the lined baking tray, leaving space between each.
  7. Press marshmallow pieces into the tops of each cookie dough ball.
  8. Bake in the preheated oven for approximately 10 minutes, until lightly golden around the edges.
  9. Remove from the oven and reshape if necessary while still warm.
  10. Cool slightly on the tray before transferring to a wire rack.
