- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes thoroughly and halve or quarter them. Slice the smoked sausage into ¼-inch rounds.
- In a small bowl, combine the ranch seasoning mix, garlic powder, onion powder, and black pepper. Stir well.
- In a large mixing bowl, toss the halved potatoes with olive oil and half of the seasoning mix.
- Line your prepared baking sheet with parchment paper and spread the seasoned potato mixture evenly in a single layer.
- Distribute the sliced smoked sausage evenly over the potatoes. Sprinkle the remaining seasoning mix on top.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through.
- Once roasting is complete, sprinkle shredded cheddar cheese over the mixture and bake for an additional 5-7 minutes.
- Remove from oven and optionally garnish with chopped parsley. Serve with a dollop of sour cream.
