Preparation Steps
- Start by peeling and chopping 2 cups of ripe mango into chunks, utilizing sweet Ataulfo or Alphonso varieties for best flavor.
- Gently drain the silken tofu without pressing it to maintain its delicate texture.
- In a high-speed blender, combine the drained silken tofu, mango chunks, full-fat coconut cream, maple syrup, fresh lime juice, vanilla extract, and fine sea salt.
- Blend on high for about 60 seconds until smooth and creamy.
- Taste and adjust sweetness or brightness as needed by adding more maple syrup or lime juice.
- Portion the mousse into serving glasses, cover with plastic wrap, and chill in the refrigerator for at least 2 hours.
- For an optional topping, whip chilled full-fat coconut cream with powdered sugar and vanilla extract until soft peaks form.
- Just before serving, add whipped coconut cream on top of each mousse and garnish with fresh mango cubes, toasted coconut flakes, and lime zest.
