  • 1 cup Full-Fat Coconut Cream Scoop from the top of a chilled can.
  • 2 tablespoons Maple Syrup Adjust based on mango sweetness.
  • 2 tablespoons Fresh Lime Juice Enhances mango flavor.
  • 1 teaspoon Vanilla Extract Pure extract recommended.
  • 1/4 teaspoon Fine Sea Salt Just a pinch enhances overall flavor.
Optional Coconut Cream Topping
  • 1 cup Full-Fat Coconut Cream Whipped for topping.

Preparation Steps
  1. Start by peeling and chopping 2 cups of ripe mango into chunks, utilizing sweet Ataulfo or Alphonso varieties for best flavor.
  2. Gently drain the silken tofu without pressing it to maintain its delicate texture.
  3. In a high-speed blender, combine the drained silken tofu, mango chunks, full-fat coconut cream, maple syrup, fresh lime juice, vanilla extract, and fine sea salt.
  4. Blend on high for about 60 seconds until smooth and creamy.
  5. Taste and adjust sweetness or brightness as needed by adding more maple syrup or lime juice.
  6. Portion the mousse into serving glasses, cover with plastic wrap, and chill in the refrigerator for at least 2 hours.
  7. For an optional topping, whip chilled full-fat coconut cream with powdered sugar and vanilla extract until soft peaks form.
  8. Just before serving, add whipped coconut cream on top of each mousse and garnish with fresh mango cubes, toasted coconut flakes, and lime zest.
