Ingredients
  

For the Chicken and Sauce
  • 2 tablespoons Olive Oil or avocado oil for different taste
  • 4 oz Prosciutto or substitute bacon
  • 4 pieces Chicken Quarters or skinless thighs
  • 1 medium Red Onion or yellow onion
  • 3 cloves Garlic or garlic powder
  • 2 cups Cherry Tomatoes or canned diced tomatoes
  • 1 teaspoon Calabrian Chili or red pepper flakes
  • 1 cup White Wine or chicken/vegetable broth
  • 2 cups Chicken Broth homemade recommended
  • 1 can White Beans or chickpeas
  • 1 cup Roasted Red Peppers or fresh bell peppers
  • 1/2 cup Golden Raisins or dried cranberries
  • 1/2 cup Green Olives or black olives
  • 1 teaspoon Ground Cinnamon or nutmeg
  • 2 sprigs Rosemary or thyme
For Finishing Touches
  • 2 tablespoons Lemon Juice or vinegar
  • 1/4 cup Fresh Parsley or cilantro
  • to taste Kosher Salt

Method
 

Cooking Instructions
  1. Preheat your oven to 350 °F (175 °C).
  2. Heat olive oil in a heavy-bottom pot over medium heat. Add sliced prosciutto and sauté until crispy, about 3–4 minutes. Remove prosciutto and drain on paper towel, leaving oil in the pot.
  3. Season chicken quarters with salt and pepper. In the same pot, sear chicken pieces for 4–6 minutes on each side until browned.
  4. Remove browned chicken and set aside. Add diced red onions and garlic, sautéing for 4–6 minutes until softened. Add halved cherry tomatoes and Calabrian chili, sauté for an additional minute.
  5. Deglaze the pan with white wine, scraping up bits from the bottom. Simmer and reduce by half, about 2–3 minutes. Stir in chicken broth, white beans, roasted red peppers, golden raisins, green olives, ground cinnamon, and rosemary.
  6. Gently return seared chicken to the pot, cover with a tight lid, and transfer to the preheated oven. Bake for 1 to 1.5 hours until chicken is fork-tender.
  7. Once cooked, remove from oven and stir in freshly chopped parsley. Top with crispy prosciutto and squeeze lemon juice before serving.

Notes

For best results, use a heavy-bottom pot for even cooking. Adjust spice levels according to preference and use fresh herbs for garnish.
