Ingredients
  

For the Meatballs
  • 1 pound Ground Turkey can substitute with ground chicken
  • 1/2 cup Fine Panko Breadcrumbs or almond flour for gluten-free
  • 2 stalks Green Onion chopped
  • 1/4 cup Cilantro chopped
  • 1 large Egg for binding
  • 3 cloves Garlic freshly minced
  • 1 teaspoon Ginger grated or minced
  • 1 teaspoon Sea Salt
  • 1 teaspoon Lime Zest
For the Sweet Chili Garlic Sauce
  • 1/4 cup Honey or maple syrup
  • 2 tablespoons Rice Vinegar
  • 1/4 cup Water adjust as needed
  • 2 tablespoons Soy Sauce gluten-free version optional
  • 1 teaspoon Red Pepper Flakes adjust for spice tolerance
  • 1 tablespoon Cornstarch for thickening

Method
 

Directions
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground turkey, panko breadcrumbs, green onion, cilantro, garlic, ginger, egg, lime zest, and sea salt. Mix until combined.
  3. Scoop about 2 tablespoons of the mixture and roll into balls. Place on a baking sheet.
  4. Bake the meatballs for 20-22 minutes until golden brown and internal temperature reaches 165°F (74°C).
  5. In a saucepan, mix honey, rice vinegar, soy sauce, and red pepper flakes. Bring to a gentle boil.
  6. In a bowl, whisk cornstarch and 1 tablespoon of water. Add to the boiling sauce while whisking continuously until thickened.
  7. Glaze the baked meatballs with the sauce and return to the oven for 2-5 minutes to set.
  8. Serve over jasmine rice or alongside sautéed vegetables, garnished with extra green onions and cilantro.
