Ingredients
  

For the Cod
  • 4 fillets Fresh Cod best flavor and flaky texture
  • 1 tbsp Smoked Paprika for smoky flavor
  • 1/4 tsp Cayenne Powder adjust based on heat preference
  • 1 tsp Garlic Powder or substitute with fresh garlic
  • 2 tbsp Fresh Thyme Leaves or use half dried thyme
  • 1 tbsp Fresh Rosemary optional, can substitute with basil
  • 1/2 cup Parmesan Cheese for a salty, crunchy crust
For the Broccoli
  • 4 cups Broccoli Florets or other seasonal vegetables
  • to taste Coarse Salt
  • to taste Ground Black Pepper
  • 2 tbsp Extra Virgin Olive Oil or avocado oil
For Garnish
  • 1/4 cup Fresh Parsley for garnish
  • 2 slices Lemon optional but recommended

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare your baking sheet by greasing one half with olive oil and lining the other half with foil or parchment paper.
  2. Spread out the broccoli florets on the greased side, drizzle with olive oil, and season with salt and pepper. Roast for 10 minutes.
  3. In a mixing bowl, combine smoked paprika, cayenne powder, garlic powder, thyme, and rosemary, adding salt and pepper. Stir in grated Parmesan cheese.
  4. Rub cod fillets with olive oil and dredge them in the spice mixture, ensuring an even coating.
  5. After 10 minutes of roasting, stir the broccoli, add the cod fillets to the tray, and bake for another 10 to 15 minutes until the cod is opaque.
  6. Garnish with fresh parsley and lemon slices before serving.
