  3. Heat remaining olive oil in an oven-safe skillet and sear the chicken thighs skin-side down for 6-8 minutes.
  4. Flip the chicken, spoon the mustard sauce over the top, and roast in the oven for 20-25 minutes.
  5. Remove chicken and make a pan sauce with the shallot and chicken broth or wine.
  6. Serve the chicken with the pan sauce poured over and let it rest for 5 minutes before serving.
