- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with olive oil.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add approximately 1 cup of chopped mushrooms and cook for about 5 minutes. Then add 4 cups of fresh spinach, sautéing for 2-3 minutes until wilted. Remove from heat.
- In a large mixing bowl, whisk together 6 large eggs with 1 cup of milk, adding salt, black pepper, garlic powder, and onion powder. Blend until smooth.
- Layer the sautéed spinach and mushrooms evenly in the prepared baking dish. Pour the egg mixture over the vegetables and sprinkle 1 cup of shredded cheese on top.
