- In a mixing bowl, combine 3 minced garlic cloves, 2 tablespoons of Chinese black vinegar or rice vinegar, 3 tablespoons of soy sauce, 1 tablespoon of vegetarian oyster sauce, 1 tablespoon of sugar, and 1 cup of water. Sprinkle in 2 tablespoons of cornstarch while stirring to ensure there are no lumps. Set aside for later.
- Preheat a large pan or wok over medium heat and add 2 tablespoons of neutral oil. Add the white parts of 2 chopped scallions and sauté them for about 1 minute until fragrant. Then, add 1 chopped shallot and 1 large chopped red bell pepper, cooking for another 3-4 minutes until the vegetables are tender.
- Give the prepared sauce a quick stir to recombine the ingredients, then pour it into the pan with the sautéed vegetables. Increase the heat slightly to a gentle boil and stir constantly. The sauce will thicken after about 2-3 minutes.
- Carefully add your air-fried or sautéed tofu balls to the sauce, ensuring each one gets a nice glaze. Gently stir them in and allow to cook for another 2-3 minutes, ensuring they are heated through.
