  2. Remove from heat and stir in 1 teaspoon of vanilla extract. Gradually add 3 cups of rolled oats, mixing thoroughly.
  3. Line a baking sheet with parchment paper. Drop heaping spoonfuls of the mixture onto the prepared sheet, shaping each cookie to about 1 inch thick.
  4. Place the baking sheet in the refrigerator and chill for at least 30 minutes.
  5. Once set, take the cookies out and enjoy! Store leftovers in an airtight container in the refrigerator.
