Ingredients
  

For the Patties
  • 1 pound Ground Chicken Can substitute with ground turkey.
  • 1/2 cup Finely Chopped Red Onion
  • 2 cloves Garlic Minced
  • 1/4 cup Chopped Parsley Fresh preferred
  • 2 tablespoons Chopped Dill Fresh preferred
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 Large Egg
  • 1/2 cup Breadcrumbs Gluten-free option available.
  • Salt to taste
  • Pepper to taste
For the Tzatziki
  • 1 cup Greek Yogurt Can substitute with regular or coconut yogurt.
  • 1 small Cucumber Finely diced
  • 2 cloves Garlic Minced
  • 1/2 tablespoon Lemon Juice Fresh preferred
  • 1 tablespoon Olive Oil Extra virgin recommended
  • Salt to taste
  • Pepper to taste

Method
 

Instructions
  1. In a mixing bowl, combine Greek yogurt, cucumber, garlic, dill, lemon juice, and olive oil. Season with salt and pepper. Chill in the refrigerator for at least 30 minutes.
  2. In a large bowl, mix ground chicken, red onion, garlic, parsley, dill, oregano, cumin, smoked paprika, salt, pepper, egg, and breadcrumbs until just combined.
  3. Shape the mixture into patties about 3 inches in diameter and 3/4 inch thick. Refrigerate the patties for 15-20 minutes before cooking.
  4. Heat olive oil in a skillet over medium heat and cook patties for 5-6 minutes on each side until golden brown and cooked through.
  5. Prepare a salad with spinach, cucumber, cherry tomatoes, Kalamata olives, and red onion. Drizzle with olive oil and lemon juice, and season with salt and pepper.
  6. Serve the salad on plates, top with chicken patties, and add a dollop of tzatziki.
