- In a mixing bowl, combine Greek yogurt, cucumber, garlic, dill, lemon juice, and olive oil. Season with salt and pepper. Chill in the refrigerator for at least 30 minutes.
- In a large bowl, mix ground chicken, red onion, garlic, parsley, dill, oregano, cumin, smoked paprika, salt, pepper, egg, and breadcrumbs until just combined.
- Shape the mixture into patties about 3 inches in diameter and 3/4 inch thick. Refrigerate the patties for 15-20 minutes before cooking.
- Heat olive oil in a skillet over medium heat and cook patties for 5-6 minutes on each side until golden brown and cooked through.
- Prepare a salad with spinach, cucumber, cherry tomatoes, Kalamata olives, and red onion. Drizzle with olive oil and lemon juice, and season with salt and pepper.
- Serve the salad on plates, top with chicken patties, and add a dollop of tzatziki.
