Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently to avoid overmixing.
  3. Transfer the meatloaf mixture into the prepared baking dish, pressing it down evenly. Bake uncovered for 20–25 minutes until the edges brown and the center reads 160°F (70°C).
  4. If using leftover mashed potatoes, warm them in a saucepan over low heat, stir in sour cream and butter until creamy, and season with salt and pepper.
  5. Spread the warm mashed potatoes evenly over the meatloaf layer, smoothing the top with a spatula.
  6. Sprinkle shredded cheddar cheese over the mashed potatoes and return the dish to the oven for 10-15 minutes until the cheese melts and bubbles.
  7. Let the casserole cool for 5–10 minutes before slicing. Garnish with fresh parsley and serve.
