Ingredients
  

For the Meatballs
  • 1.5 pounds Ground Meat Beef, chicken, turkey, or a mix
  • 1 cup Breadcrumbs Panko or regular
  • 1 large Egg Helps bind the mixture
  • 1 medium Onion Freshly grated
  • 3 cloves Garlic Minced
  • 1 teaspoon Paprika For flavor
  • to taste Salt
  • to taste Pepper
For the Potatoes
  • 2 pounds Potatoes Russet or Yukon Gold, sliced evenly
  • 2 tablespoons Olive Oil For tossing the potatoes
For the Cheese Topping
  • 2 cups Shredded Cheese Mozzarella, cheddar or Parmesan, mixed

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine your choice of ground meat, breadcrumbs, egg, grated onion, minced garlic, paprika, salt, and pepper. Mix until just combined and form small meatballs.
  2. Heat a tablespoon of olive oil in a large skillet over medium heat and brown the meatballs until golden, approximately 5-7 minutes.
Potato Preparation & Assembly
  1. Wash and slice the potatoes about 1/4 inch thick. Toss them with olive oil, salt, and pepper.
  2. Preheat oven to 375°F (190°C). Grease a baking dish, layer potatoes, place meatballs, and sprinkle shredded cheese over everything.
Baking
  1. Cover with foil and bake for 25 minutes. Remove foil, add remaining cheese, and bake uncovered for another 10-15 minutes.
Serving
  1. Let cool for about 5 minutes, garnish with parsley, and serve warm.
