Preparation Instructions
  1. In a large mixing bowl, whisk together the minced red onion, finely chopped green chili, ground turmeric, kosher salt, and chopped cilantro. Pour in the milk and continue whisking until seamlessly combined.
  2. Take a slice of your favorite bread and immerse it gently into the egg mixture, ensuring both sides are well-coated. Allow it to soak for about 10-15 seconds per side.
  3. Heat a non-stick skillet over medium heat and add about 1/2 teaspoon of oil, swirling it to coat the surface. After approximately 1-2 minutes, the oil should shimmer slightly.
  4. Gently place the soaked bread onto the preheated pan. With a spoon, add a bit more of the onion mixture on top. Cook for about 1 minute, or until golden brown.
  5. Carefully flip the toast using a spatula, allowing the other side to cook for another minute until it becomes golden brown.
  6. Once cooked on both sides, slide the French toast onto a plate. Serve immediately with a side of ketchup and cilantro mint chutney.
