- In a large mixing bowl, whisk together the minced red onion, finely chopped green chili, ground turmeric, kosher salt, and chopped cilantro. Pour in the milk and continue whisking until seamlessly combined.
- Take a slice of your favorite bread and immerse it gently into the egg mixture, ensuring both sides are well-coated. Allow it to soak for about 10-15 seconds per side.
- Heat a non-stick skillet over medium heat and add about 1/2 teaspoon of oil, swirling it to coat the surface. After approximately 1-2 minutes, the oil should shimmer slightly.
- Gently place the soaked bread onto the preheated pan. With a spoon, add a bit more of the onion mixture on top. Cook for about 1 minute, or until golden brown.
- Carefully flip the toast using a spatula, allowing the other side to cook for another minute until it becomes golden brown.
- Once cooked on both sides, slide the French toast onto a plate. Serve immediately with a side of ketchup and cilantro mint chutney.
