Ingredients

For the Bites
  • 6 large Eggs Provide structure and protein
  • 6 strips Bacon Adds savory flavor and crunch; swap for turkey bacon for a leaner option
  • 1 cup Cheddar Cheese Feel free to substitute with mozzarella or pepper jack
  • 8 oz Cream Cheese Can be exchanged with Greek yogurt for a lighter touch
  • 1 cup Green Onions Offer freshness and a mild onion flavor; replace with shallots or chives if you prefer
  • 1 tsp Garlic Powder Enhances overall flavor; fresh minced garlic works great too
  • 1 tsp Black Pepper Provides seasoning and a hint of heat; salt can replace it for a low-sodium diet
  • 1 tsp Salt Omit if you are carefully watching your sodium intake
For Serving
  • 1 cup Salsa A fresh and zesty addition to elevate your bites
  • 1 cup Sour Cream Adds a creamy element that complements the savory flavors beautifully

Equipment

  • muffin tin
  • Skillet
  • mixing bowl
  • Whisk

Method

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin by greasing it lightly or lining it with silicone liners.
  2. In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain grease and chop into bits.
  3. In a bowl, whisk together the eggs and cream cheese until smooth and creamy, about 2-3 minutes. Add garlic powder, black pepper, and salt.
  4. Gently fold in shredded cheddar cheese, chopped green onions, and half the crispy bacon into the egg mixture.
  5. Spoon the egg mixture into the muffin tin, filling each cup about three-quarters full. Top with remaining bacon bits.
  6. Bake in the preheated oven for 18-20 minutes, until set and lightly golden on top.
  7. Cool for a few minutes in the tin before removing. Serve warm or at room temperature.
