Preparation Steps
  1. In a mixing bowl, combine 1 cup of Greek yogurt, 1 grated cucumber (well-drained), 2 minced garlic cloves, 1 tablespoon of lemon juice, 2 tablespoons of chopped dill, 1 tablespoon of olive oil, and a pinch of salt and pepper. Stir until well-mixed and taste for adjustments. Chill for at least 30 minutes.
  2. In a resealable plastic bag, combine 1 pound of chicken thighs, ½ cup of Greek yogurt, 2 minced garlic cloves, the juice of 1 lemon, 2 tablespoons of olive oil, 1 tablespoon of dried oregano, 1 teaspoon of paprika, a pinch of nutmeg, and salt and pepper to taste. Seal and massage marinade into chicken. Refrigerate for at least 1-2 hours.
  3. Preheat grill to medium-high heat. Grill chicken for 4-5 minutes on each side until internal temperature reaches 165°F.
  4. Let the chicken rest, then slice into strips. Warm pita bread, fill with sliced chicken, lettuce, tomatoes, feta, red onions, and tzatziki sauce.
  5. Serve immediately with garnishing options like dill or paprika.
