- In a mixing bowl, combine 2 lbs of chicken with 2 tablespoons of olive oil, 2 teaspoons of paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and a pinch of salt and pepper. Toss well and let marinate for at least 30 minutes.
- Melt 1 stick of butter in a saucepan over low heat. Add minced garlic, hot sauce, and red pepper flakes. Stir for 5-7 minutes until the garlic softens. Mix in parsley and Parmesan until melted and smooth.
- Thread marinated chicken pieces onto soaked wooden skewers, leaving space for even cooking.
- Preheat grill to medium-high heat, around 375°F to 400°F. Grill skewers for 10-15 minutes, turning occasionally and basting with butter sauce until chicken reaches 165°F.
- Remove from grill and let rest for a few minutes. Serve warm drizzled with remaining butter sauce.
