  • ½ cup Crème Fraîche Substitute with Greek yogurt for fewer calories.
  • 1 tablespoon Mustard Opt for Dijon or whole grain.
  • to taste Salt and Pepper Adjust according to personal taste.

For the Shells
  • 4 pieces Vol-au-Vent Shells Consider gluten-free pastry shells.

Method
 

Preparation Steps
  1. In a small saucepan, heat 2 cups of chicken stock on medium heat. Add one bay leaf and bring it to a gentle simmer.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1 finely minced onion and sauté for 3-4 minutes.
  3. Add 8 ounces of sliced mushrooms to the skillet and cook for 5-6 minutes. Add 2 cloves of minced garlic and cook for 1 minute.
  4. Sprinkle 2 tablespoons of all-purpose flour over the mushroom mixture. Stir and cook for 1-2 minutes. Pour in ½ cup of white wine.
  5. Slowly pour in the warm chicken stock, stirring continuously for 3-4 minutes until thickened. Remove the bay leaf.
  6. Incorporate 2 cups of diced cooked chicken, ½ cup of crème fraîche, and 1 tablespoon of mustard into the sauce for 2-3 minutes.
  7. Stir in a handful of chopped fresh parsley. Spoon the creamy filling into the warmed vol-au-vent shells.
