- Preheat your oven to 375°F (190°C). Grease or line your loaf pan with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, milk, eggs, Dijon mustard, garlic powder, and onion powder. Mix until just combined.
- Flatten half of the meatloaf mixture into a rectangle on parchment paper. Layer with slices of ham and shredded Swiss cheese.
- Roll the meat mixture tightly around the ham and cheese filling, sealing the ends well. Place seam-side down in the loaf pan.
- Mix breadcrumbs with melted butter and sprinkle over the top of the meatloaf.
- Bake for 45-55 minutes until the internal temperature reaches 165°F (74°C). Cover with foil if browning too quickly.
- Let the meatloaf rest for 10 minutes before slicing and serving.
