Step-by-Step Instructions
  1. Heat frying oil in a medium pan over medium heat. Sauté onion until soft and translucent, about 5 minutes. Add minced garlic and Herbes de Provence, stirring for an additional minute. Incorporate chopped red bell pepper, crushed tomatoes, and balsamic vinegar. Simmer for 10-15 minutes until thickened, then blend until smooth.
  2. Preheat your oven to 425°F (220°C). Grease a baking dish with oil or cooking spray.
  3. Thinly slice tomatoes, zucchini, yellow squash, eggplant, and potatoes, ensuring even thickness.
  4. Spread the prepared sauce in the baking dish. Layer the vegetables in an alternating pattern: potatoes, zucchini, yellow squash, eggplant, and tomatoes, until all are used.
  5. Season the top with salt and pepper to taste. Drizzle with olive oil.
  6. Bake uncovered in the preheated oven for 45 minutes, until vegetables are tender and edges begin to brown.
  7. Remove from oven, sprinkle shredded Gruyere cheese on top, and bake for an additional 10-15 minutes, or until cheese is melted and golden.
  8. Let the Baked Ratatouille rest for 15 minutes before serving.
