- Preheat your oven to 400°F (200°C). Drain and rinse the chickpeas, then pat them dry with a kitchen towel. In a bowl, toss the chickpeas with a drizzle of olive oil, paprika, salt, and black pepper. Spread them evenly on a baking sheet and roast for 12-15 minutes until they turn crispy and golden brown.
- In a large skillet or pot, heat 2 tablespoons of coconut oil over medium heat. Add the diced sweet Vidalia onion and sauté for about 5 minutes until it becomes translucent.
- Stir in 2 minced garlic cloves and 1 tablespoon of freshly grated ginger root into the sautéed onion. Cook for about 1 minute until the mixture becomes aromatic.
- Incorporate 2-3 tablespoons of Thai yellow curry paste into the skillet and stir for 1-2 minutes until it toasts slightly.
- Add the sliced carrot, diced red bell pepper, and broccoli florets to the skillet. Stir well for about 2-3 minutes.
- Pour in 1 can (14 oz) of coconut milk, 1 cup of vegetable broth, and 2 tablespoons of soy sauce into the pot. Stir in half of the roasted chickpeas if made.
- Bring the mixture to a gentle boil, then reduce the heat to low to simmer uncovered for about 10 minutes.
- Taste the curry and adjust the flavors as desired with lime juice, cilantro, or light brown sugar.
- Ladle the Thai Yellow Curry into bowls, and top with any remaining crispy roasted chickpeas for added texture.
