Step-by-Step Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a vigorous boil. Add rigatoni pasta and cook until al dente, about 9 to 10 minutes. Drain, reserving a cup of pasta water.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add onion, cooking until soft, about 10 minutes. Add crushed red pepper flakes if desired.
  3. Cook the Sausage: Add Italian sausage, breaking it into small pieces. Cook until browned, about 6 to 8 minutes.
  4. Incorporate Garlic and Tomato Paste: Stir in garlic and tomato paste, cooking for 1 minute until fragrant.
  5. Add Tomatoes and Wine: Pour in grape tomatoes and white wine. Season with salt and pepper, cooking for about 10 minutes until tomatoes burst.
  6. Stir in Zucchini: Add diced zucchini, cooking for about 5 minutes until tender.
  7. Combine Pasta with Sauce: Toss cooked rigatoni with the sauce, adding reserved pasta water for desired consistency.
  8. Finish with Fresh Basil: Fold in chopped basil and serve hot, garnished with grated Parmesan cheese.
