Preparation Steps
  1. Prepare the Mojo Marinade by whisking together orange juice, lime juice, minced garlic, and olive oil in a medium bowl. Stir in chopped cilantro, ground cumin, dried oregano, salt, and black pepper.
  2. Marinate the Pork by placing it in a large resealable bag or dish, pouring the mojo marinade over it. Ensure it's well covered, seal, and refrigerate for at least 4 hours, ideally overnight.
  3. Preheat the Oven to 375°F (190°C) about 30 minutes before roasting.
  4. Roast the Pork in a roasting pan for 45-60 minutes, basting every 15 minutes with the reserved marinade until the internal temperature reaches 145°F (63°C).
  5. Crisp the Exterior by switching the oven to broil for an additional 3-5 minutes, watching closely.
  6. Rest and Serve by letting the pork sit for 10 minutes after removing from the oven, then slice and serve.
