Preparation Steps
- Prepare the Mojo Marinade by whisking together orange juice, lime juice, minced garlic, and olive oil in a medium bowl. Stir in chopped cilantro, ground cumin, dried oregano, salt, and black pepper.
- Marinate the Pork by placing it in a large resealable bag or dish, pouring the mojo marinade over it. Ensure it's well covered, seal, and refrigerate for at least 4 hours, ideally overnight.
- Preheat the Oven to 375°F (190°C) about 30 minutes before roasting.
- Roast the Pork in a roasting pan for 45-60 minutes, basting every 15 minutes with the reserved marinade until the internal temperature reaches 145°F (63°C).
- Crisp the Exterior by switching the oven to broil for an additional 3-5 minutes, watching closely.
- Rest and Serve by letting the pork sit for 10 minutes after removing from the oven, then slice and serve.

Notes
Marinate overnight for best flavor. Regular basting will keep the pork moist. Use a meat thermometer for perfect doneness.
