Ingredients
  

For the Shrimp
  • 1 pound peeled and deveined shrimp
  • 2 tablespoons extra virgin olive oil for sautéing
  • 3 cloves fresh garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano

  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa

  • 2 cups chopped romaine lettuce
  • 1 medium cucumber, diced
  • 1 cup halved tomatoes cherry or any ripe variety
  • ½ cup thinly sliced red onion soaked in water for 10 minutes if desired
  • ¼ cup pitted and sliced kalamata olives
For the Toppings
  • ½ cup crumbled feta cheese or goat cheese
  • 1 medium lemon, cut into wedges for serving
  • to taste tablespoon fresh parsley, chopped for garnish

Method
 

Step‑by‑Step Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add minced garlic, smoked paprika, oregano, salt, and pepper. Sauté for 1-2 minutes until fragrant.
  2. Add shrimp to the skillet and cook for 3-4 minutes until pink and opaque. Remove from skillet and set aside.
  3. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water, then bring to a boil. Reduce heat, cover, and cook for 10-15 minutes until tender.
  4. In a large bowl, combine romaine, cucumber, tomatoes, red onion, and kalamata olives.
  5. Mix cooked quinoa with vegetable medley, then layer sautéed shrimp on top. Add crumbled feta and toss gently.
  6. Garnish with lemon juice and parsley. Serve immediately with lemon wedges.
