Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Slice the zucchini in half lengthwise and scoop out insides, leaving a quarter-inch thick base.
  2. In a large skillet over medium heat, drizzle in olive oil. Add diced onion and bell pepper, sauté for 5–7 minutes until soft and fragrant.
  3. Stir in shredded chicken, marinara sauce, garlic, fresh basil, salt, and pepper. Cook for 3 to 4 minutes, mixing well.
  4. Spoon filling into each zucchini boat, packing tightly and mounding slightly over the top.
  5. Sprinkle mozzarella cheese generously over each stuffed zucchini. Optionally add Parmesan cheese on top.
  6. Bake for 20–25 minutes, until zucchini is tender and cheese is bubbling and golden.
