Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts in half horizontally to create thinner cutlets. Season with salt, pepper, and garlic powder, then arrange in a greased baking dish.
  3. In a mixing bowl, combine cream cheese and heavy cream until smooth. Stir in onion powder, paprika, Italian seasoning, grated Parmesan, and half of the shredded mozzarella.
  4. Pour the creamy mixture over the chicken, then drizzle with the oil from the sun-dried tomatoes and sprinkle with chopped tomatoes.
  5. Cover tightly with foil and bake for 20 minutes.
  6. Remove foil, stir in fresh spinach, and top with remaining mozzarella cheese.
  7. Bake uncovered for an additional 10 minutes until cheese is melted and lightly browned.
  8. Remove from the oven and let rest for about 5 minutes before serving.
