  • 1 tsp Garlic Powder or fresh garlic for robust flavor
  • 1 tsp Salt reduce for low-sodium diets
  • 1/2 tsp Black Pepper or white pepper for milder flavor
For the Cornmeal Topping
  • 1 cup Cornmeal gluten-free if necessary
  • 1 cup Milk or plant-based milk
  • 1 large Egg or flax egg/applesauce for egg-free
  • 1 cup Shredded Cheddar Cheese or dairy-free cheese
  • 1/2 cup Black Olives optional
For Garnish
  • 1/4 cup Cilantro or green onions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion for about 5-7 minutes until browned and translucent.
  3. Stir in the black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for about 5 minutes.
  4. In a mixing bowl, combine cornmeal, milk, and egg. Whisk until smooth.
  5. Grease a 9x13-inch baking dish and pour half of the cornmeal mixture into the dish.
  6. Spoon the beef mixture over the cornmeal layer evenly.
  7. Pour the remaining cornmeal mixture over the beef layer and spread evenly.
  8. Sprinkle shredded cheddar cheese and optional black olives on top.
  9. Bake for 30-35 minutes until golden brown and firm.
  10. Let cool for 10 minutes before slicing. Garnish with fresh cilantro.
