Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until smooth.
  2. Add chicken pieces to the marinade and ensure each piece is thoroughly coated. Cover and refrigerate for at least 1 hour.
  3. Soak wooden skewers in water for 30 minutes to prevent burning during grilling.
  4. Preheat the grill or grill pan to medium-high heat, aiming for around 400°F (204°C).
  5. Thread the marinated chicken pieces onto the skewers, leaving space between each piece for even cooking.
  6. Place the skewers on the grill, cooking for about 10-15 minutes. Turn them every 3-4 minutes until they reach an internal temperature of 165°F (75°C).
  7. Remove from grill and let the skewers rest for 2-3 minutes to redistribute juices.
  8. Mix leftover sweet chili sauce and mayonnaise for the dipping sauce. Serve hot with the dipping sauce on the side.
