- In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until smooth.
- Add chicken pieces to the marinade and ensure each piece is thoroughly coated. Cover and refrigerate for at least 1 hour.
- Soak wooden skewers in water for 30 minutes to prevent burning during grilling.
- Preheat the grill or grill pan to medium-high heat, aiming for around 400°F (204°C).
- Thread the marinated chicken pieces onto the skewers, leaving space between each piece for even cooking.
