- Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat until shimmering. Add 1 diced onion and 2 Thai chilies, sautéing for about 3 minutes until the onion becomes translucent. Stir in 4 minced garlic cloves and continue cooking for another 1-2 minutes until fragrant.
- Increase the heat to high and add 1 pound of ground beef or pork to the pan. Break the meat apart with a spatula and stir frequently for about 5-7 minutes until completely browned and no longer pink.
- Pour in 2 tablespoons each of fish sauce, oyster sauce, and dark soy sauce, followed by 1 tablespoon of brown sugar. Stir diligently for 1-2 minutes, allowing the mixture to reduce slightly and coat the meat.
- Remove the wok from heat and stir in 1 cup of fresh Thai basil until it wilts, about 20-30 seconds.
- Serve the Pad Kra Pao over a bed of fluffy jasmine rice, optionally topping with a fried egg.
