  • 2 cups Cooked Salmon or canned salmon, drained well
  • 1 large Egg
  • 1 cup Breadcrumbs use gluten-free for gluten-free option
  • 1/4 cup Parsley fresh, or substitute with cilantro
  • 1 tbsp Dill or omit, can substitute with tarragon
  • 2 cloves Garlic minced, adjust according to taste
  • 1/4 cup Green Onion chopped, or use shallots
  • 1 tbsp Lemon Zest
  • 1 tbsp Lemon Juice can use lime instead
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive Oil for frying, can use any cooking oil
For the Avocado Sauce
  • 1 large Avocado ripe
  • 1/2 cup Greek Yogurt can be replaced with dairy-free yogurt
  • 1 clove Garlic for sauce, adjust or omit as desired
  • 2 tbsp Water to thin, can use lemon juice

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine flaked cooked salmon, one beaten egg, breadcrumbs, fresh parsley, dill, minced garlic, chopped green onion, lemon zest, and juice. Season with salt and pepper. Mix until well incorporated.
  2. Shape the salmon mixture into golf ball-sized meatballs, about 12-14 total. Place them on a baking sheet, ensuring space between each meatball.
  3. Heat a nonstick skillet over medium heat and add olive oil. Once hot, gently place meatballs in the skillet and cook for 3-4 minutes on each side until golden brown.
  4. Prepare the creamy avocado sauce by blending avocado, Greek yogurt, olive oil, lemon juice, and garlic until smooth. Add water if necessary to thin.
  5. Serve meatballs warm, drizzled with avocado sauce or alongside for dipping.
