  • 2 English cucumbers for refreshing crunch
  • 2 celery stalks adds crunch
  • 1 can chickpeas rinsed and dried
  • 1/4 cup fresh cilantro roughly chopped
For the Creamy Dressing
  • 1 tablespoon tahini or sunflower seed butter
  • 2 limes juice and zest
  • 2 tablespoons olive oil
  • 1 pinch salt adjust to taste

Method
 

Dressing Preparation
  1. Grate the zest of one lime into a mixing bowl. Juice both limes and add juice, a pinch of salt, tahini, and olive oil to the bowl. Whisk together until smooth.

Chickpea Preparation
  1. Rinse chickpeas under cold water and pat dry with a paper towel.
Vegetable Preparation
  1. Chop cucumbers and celery into bite-sized pieces, add cilantro.
Combine Ingredients
